INDIA Monsoon Malabar is extracted from "cherry" beans. After dehusking, the coffee is transported to the coastal city of Mangalore, where "monsooning" takes place in large warehouses with open walls. During the rainy months of June to August, the coffee is stored in very well-ventilated warehouses with a certain thickness of walls, so that the coffee slowly absorbs moisture. Then, once it has absorbed enough water, it is sifted and packed into bags that are stacked to ensure proper and even "monsooning." This process is carried out many times during the monsoon months.
